Spoon Mashed Potatoes
Yield: 2 cups
1 lb baby red bliss potatoes
1 tsp Hain Pure Foods® Sea Salt
3 Tbsp WESTSOY® Original Soymilk
freshly cracked black pepper
1. Preheat oven to 425°F.
2. Toss potatoes in a large bowl with olive oil and salt.
3. Place in a large roasting pan and roast in oven for 35-40 minutes until potatoes are fork tender.
4. Transfer to a bowl and using a wooden spoon mash potatoes.
5. Add the soymilk and continue to mash until well combined. Season to taste and serve
